Nourishing Soup from a Friend

Dear Maude,

I made your Old Favorite Green Soup on Friday and it is delicious! I have some stocked in my freezer now. Yum!

To return the nourishing each other favor, here’s a recipe that I got from David Gabbe that is also wonderful and yum.
Beans and Greens soup

4 cups water
2 cups kale (chopped finely)
2 cups cooked navy beans or other white beans
1 medium onion, chopped
1 medium carrot, chopped
1 medium potato, peeled and diced
1 tablespoon toasted sesame oil
2 teaspoons dried parsley
1 teaspoon salt
1 teaspoon garlic powder

3 tablespoons red miso dissolved in 3 tablespoons water
2 tablespoons lemon juice
2 tablespoons nutritional yeast

1. In large pot, combine all ingredients except miso, lemon juice, and yeast. Bring to a boil over medium-high heat, reduce heat, cover, and simmer 30 minutes. Stir occasionally.
2. Allow soup to cool slightly and add the miso, lemon juice, and yeast just before serving.

Makes 4-6 servings.
